Doughs Like a Pro—Savory Pies and Tarts

The savory side of the Sofra pastry kitchen is Maura's true passion. Inspired by the season's vegetables, local grains, and the flavors of the Eastern Mediterranean, this demonstration class explores a collection of our favorite savory doughs and the many ways they can be transformed into beautiful meals. You'll learn techniques that can be adapted again and again with different fillings, toppings, and seasonal ingredients.  Maura will demonstrate a flaky rye buttermilk pie dough filled with roasted delicata squash, tahini, and pumpkin seeds; Armenian matnakash topped with za'atar and transformed into shakshuka buns; halloumi and olive focaccia; and our beloved spinach pide with golden raisins and feta.

All of our cooking classes are held in our Allston location and are demonstration-style. Our chefs will do the cooking and baking and you will get to do the eating and drinking—and we'll send you home with all of the recipes from class!
