Honey may be one of the most fascinating foods on the planet. Its flavor reflects the flowers, trees, and landscapes where bees forage, creating a range of tastes far more nuanced than sweetness alone. In this demonstration-style class, we'll explore honey's remarkable diversity through a guided tasting with honey expert Nikki of Portula, who imports pine and tree honeys from her home region near Kalamata, Greece. We'll compare these distinctive Greek honeys with local varieties and discuss how terroir, climate, and forage influence flavor, texture, and aroma. Chef Ana will demonstrate a few savory recipes that showcase honey's versatility in the kitchen, including black-eyed pea ezme with honey lemon vinaigrette, roasted carrots with pine honey, brown butter and sage, and chicken cutlets with tomato sesame jam and Executive Pastry Chef Nik will make his show-stopping honey custard dessert.
