Liquid Gold: Cooking with Olive Oil

Recognized by UNESCO as part of the world’s Intangible Cultural Heritage, the olive-oil-rich Mediterranean diet is celebrated not only for its health benefits but also for its remarkable depth of flavor. Like wine, olive oil expresses terroir, varietal, and personality.

In this class, Chef Ana will lead a guided tasting of several oils — exploring their fruitiness, pepper, and spice — and introduce a freshly pressed oil from one of her favorite producers, Chafic Maalouf. Chafic will share insights into the recent olive harvest and what makes the new oil so exceptional.

Ana will then demonstrate four dishes that showcase olive oil as the soul of Mediterranean cooking: olives with tomato and za’atar, carrot tershi, chickpea pancakes with fig jam and olive oil greens, and arctic char with skordalia.

All of our cooking classes are held in our Allston location and are demonstration-style. Our chefs will do the cooking and baking and you will get to do the eating and drinking—and we'll send you home with all of the recipes from class!
