Join Oleana’s pastry chef, Nik Mastalerz, for an intimate evening of bread-making with freshly milled wheat. Learn his signature whole-grain dough used for Oleana’s za’atar bread and shape it into two other flatbreads: bazlama, a pillowy griddled bread, and biberli, a thin flatbread topped with red pepper and nigella. Nik will share insights on fresh-ground wheat and its impact on flavor and texture. Enjoy snacks as he introduces the class and take home the breads you make.

All of our cooking classes are held in our Allston location and are demonstration-style. Our chefs will do the cooking and baking and you will get to do the eating and drinking—and we'll send you home with all of the recipes from class!
