Discover the essential cheeses of the Eastern Mediterranean through traditional techniques like brining, which give feta and halloumi their distinctive flavors and textures. Taste a variety of fetas side by side and sample authentic halloumi from Cyprus—made from sheep’s milk, cooked, and brined for its signature ability to caramelize. We’ll also explore graviera and kasseri, iconic melting cheeses from Greece and Turkey. Enjoy a special demo by Lourdes Smith on how to make homemade string cheese, and watch as Chef Ana prepares dishes like halloumi with fig jam and red pepper ezme, Hünkar Beğendi (braised lamb with creamy eggplant béchamel), and Thessaloniki-style chicken with lemon, oregano, and kasseri.

All of our cooking classes are held in our Allston location and are demonstration-style. Our chefs will do the cooking and baking and you will get to do the eating and drinking—and we'll send you home with all of the recipes from class!
