Couscous & Caponata - Arabian Flavors of Sicily

Sicilian cuisine carries a distinct Arab imprint—seen in sweet and sour flavors, rice and stuffed dishes, skewers, confections, and the use of nuts, raisins, saffron, and citrus. Whatever its exact origins, Sicilian food stands apart from Italian. Join Chef Ana Sortun as she demonstrates Sicilian dishes with Arabic roots, including sweet & sour beets, baked squash with ricotta and apple caponata, Swiss chard and grano gratin with pistachio, and Trapani-style fish couscous with saffron–almond sauce.

All of our cooking classes are held in our Allston location and are demonstration-style. Our chefs will do the cooking and baking and you will get to do the eating and drinking—and we'll send you home with all of the recipes from class!
