AEGEAN EATS: Spring Cooking from the Turkish Coast

Aegean cooking is defined by simplicity and restraint—dishes built around exceptional olive oil, seasonal vegetables, and the natural brightness of herbs and citrus. Along Turkey’s western coast, especially in Urla and Çeşme, small farms, wild greens, and tender artichokes shape the table, alongside the region’s signature İzmir köfte—rustic, home-style, and deeply comforting. Fresh from recent travels, Ana will share a spring menu inspired by this region, demonstrating dishes like fava purée with wild greens, cucumber and oregano, rolled cheese börek, artichokes with carrots, fava and orange, İzmir köfte with potatoes, spring onions and tomato.

All of our cooking classes are held in our Allston location and are demonstration-style. Our chefs will do the cooking and baking and you will get to do the eating and drinking—and we'll send you home with all of the recipes from class!
