Join Oleana’s Chef de Cuisine, Cara Chigazola in her final class here before moving on to new culinary adventures in Vermont!  Cara will provide chef’s tips on buying and preparing fish and discuss cooking methods like roasting, searing, caramelizing, cooking in parchment, stuffing and braising. TURKISH MEZE

Meze are small plates packed with big flavor meant to be savored and shared!  Throughout the Eastern Mediterranean and Middle East meze are a common way to start a meal. These small plates of food are a way to gather friends and family for sharing of food, drink, story telling and conversation. Get organized and more confident making dinner during the week! Understanding spices as a food and how to use them can help transform something ordinary into something extraordinary! It’s a well kept kitchen secret; braising makes heroes out of weekend cooks. There is no other technique that asks so little yet gives so much back! SPICE MASTER

Come meet our dear friend, a world renowned, wonderfully talented chef and amazing spice blender, Lior Lev Sercarz from La Boite in New York! This is how he works; after grinding spices and mixing all the ingredients together, Lior places the blend in a jar and then walks away. He checks email or has a cup of coffee and after an hour, he returns to taste and see how the spice lingers on the palate. He rubs some into his fingers to feel the texture and to see if he’s happy with the consistency. He looks at the color. When he opens the jar, he smells the lid and not the jar itself. Lior is after the essence of the spice and assures the perfect balance and proportions by scent and intuition.

Chef Ana Sortun will demonstrate a few recipes and discuss spices with Lior and the class: Carrot Soup with IZAK spice; Rice pilaf en croute with ANA spice; Crispy chicken thighs with SHABAZI spice, pumpkin seeds and barberries; Lamb and grape leaf tart with KIBBEH spice plus Maura’s Mishmallows with MISH MISH spice for dessert! Our chefs at Oleana, Sofra and Sarma swear by the magic of Lior’s incredible spice blends and after this class you will too!  Lior’s book, The Art of Blending will be available for purchase as well as many of his different spice blends.

EDIBLE GIFTS

Sweeten up your evening with French Macarons, candies and chocolate! Former Sofra superstar baker, now owner of Northlight Baking Co., Shira Melen will be joining us to demonstrate her fabulous French Macarons. Shira will make many of her amazing flavor combinations including one of our favorites, milk chocolate tahini! Pastry Chef de Cuisine, Emily Weber will tempt your sweet tooth with Buttercrunch toffee and Chocolate Tahini Date cookie bars. These small delights will make perfect edible gifts for family and friends this time of year! While Sofra is not a gluten-free facility, the recipes demonstrated in this class will all be made gluten-free.

FOUR SEASONS OF PASTA

Our friend, mentor and acclaimed food writer Nancy Jenkins teamed up with her master chef daughter, Sara, to write a unique four seasons cookbook devoted to simple, everyday pasta recipes! Jenkins and her mom draw on their own background in Italy, where they lived, cooked, studied and worked for many years. Come and sample some of the Fall recipes from their new book, Four Seasons of Pasta: Pumpkin & pumpkin seed maccheroncini; Sweet potato gnocchi with brown butter & sage; and Fedelini in red wine with lemon & chili pepper. Nancy will share tips and advice on tasting and buying olive oil. Chef Ana and Chef Sara will demonstrate a recipe from the book and send you home with a personalized, autographed copy so that you can bring a bit of Tuscany into your own kitchen! Mangia!

MEET THE FARMER

Farm fresh vegetables, (especially one’s grown by Chef Ana’s husband, Chris at Siena Farms) play a staring role on the menus at Oleana, Sofra and Sarma! They are essential ingredients in Mediterranean cuisine and they are at their peak in November! Fall is New England’s prime harvest season so now is the perfect time to cook a lot with them! Join Chef de Cuisine, Cara Chigazola and one of our lucky farmers from Siena Farms as they demonstrate how to make vegetables the main attraction of your next meal! Brussels sprouts and cabbage salad with green harissa vinaigrette; Cauliflower and leek borek; and Kohlrabi pancakes with herb labne and walnuts are just a few of the dishes you will be enjoying this evening. MEDITERRANEAN VEGETARIAN FEAST

From the hilly Greek countryside comes an array of vegetables and our wonderful friend and Greek food authority, Aglaia Kremezi! She has not only gone back to her roots, with seasonal vegetarian foods she was raised on, but she has also opened a window into a world for cooks across the globe to learn how to make simple, yet extremely flavorful meals. You’ll be struck by the taste of love when you try some of the dishes from her new book, Mediterranean Vegetarian Feast prepared by Chef Ana Sortun and Chef Maura Kilpatrick. Recipes include: Skordalia—garlic and almond spread; Savory olive oil biscotti; Rolled pie with peppers, walnuts and raisins, Cauliflower gratin with feta; Chickpeas and toasted bread with yogurt-tahini sauce; and Pumpkin-tangerine marmalade bread. Chef Ana will demonstrate one of Aglaia’s recipes and you will receive an autographed copy of the book so you can bring both the traditional and new styles of healthy Mediterranean cooking home!

Living in the Boston area means we are lucky enough to experience very fresh fish and shellfish all year long! Join Chef Ana Sortun for tips on buying and preparing fish and brush up on cooking methods like roasting, searing, caramelizing, cooking in parchment, stuffing and braising. TURKISH STREET FOOD

The inspiration behind some of the delightful cuisine at Sofra and Oleana are the traditional Turkish street food dishes that are full of flavor! Spices like tart sumac, sweet dried mint, earthy cumin and hot red pepper paste are just a few of the key ingredients that add such depth to these dishes. Chef de Cuisine, Didem Hosgel will share her stories of growing up in Turkey and prepare some of her favorite recipes like, Red lentil soup with potato, cumin and Turkish red pepper paste and Chick pea pilaf with tomato, onion and lamb. She will also put a spin on a classic Istanbul-style fish sandwich. The class will leave you with spice filled memories and inspiration to make your own amazing Turkish dishes at home!
